  • Heat oven to 350°F.
  • Mix crushed corn flakes, cheese and pepper. Brush chicken with mayo; sprinkle with crumb mixture.
  • Place in 13x9-inch baking dish sprayed with cooking spray.
  • Bake 1 hour or until chicken is done (165°F).

Serving Suggestion

Add some sweet potatoes to the oven when you bake the chicken. Then, round out the meal with some steamed broccoli and a fruit salad.

Substitute

Substitute MIRACLE WHIP Dressing for the mayo.

I have made this recipe many times, and always received rave reviews, and requests to make it again. I have purchased a box of corn flake crumbs, and usually use boneless chicken breasts. I also tend to add a generous portion of grated parmesan cheese (not the canned one, although that works also), and then add the corn flake crumbs on top, and it always comes out perfectly and is one of my all-time favorite recipes. If I don't have corn flake crumbs, you can use seasoned bread crumbs or regular bread crumbs, but I highly recommend the corn flake crumbs (only buy them in a box, already crushed, as I don't have any cereal in the house). I would also take this dish to any pot-luck dinner...it is that outstanding!

I used bone-in thighs, skin removed, added more Miracle Whip and used a cup of DiGiorno shredded three cheese (parmesan, romano & asiago) instead of just parm. He even told the kids it was bad so he could have more!

With chicken, me and my mother-in-law were always baking it in the same manner, so I decided to look for something new to do with the chicken and this recipe really worked. The whole family enjoyed it so much because of the creamy but crunchy taste, they asked me to make it again not even a week later.

My husband and kids (2 & 3) loved it and I am going to make it again today. I had left the house to pay some bills while it was baking and over baked it by 30 min. The chicken was still just as juicy as it could be.

All the high ratings made me decide to try this and you can now add mine to the group. This is easy and delicious and will become one of my regulars.

Rated 4 out of 5 by from Quick, easy & cheap recipe. Quick, easy & cheap recipe. The Mircle Whip gives it a great zip. To give it a little bit of a crunch put it under the broiler for a minute or two, but watch it, the topping will burn if under for more than that. Would also be great with just chicken breasts.

I add a little Italian Seasoning to the Corn Flakes/Parmesan Cheese mixture for added flavor. I serve with spegetti with sauce and a salad to round out the meal.

Rated 4 out of 5 by from I used regular breadcrumbs in place of the cornflakes. I used regular breadcrumbs in place of the cornflakes. The chicken was soo moist and tasty. I also turned the chicken after 30min for even cooking and sprayed the dish with Pam . I will try the cornflakes the next time. Try it its a keeper !
