I am not one that likes to cook, because it is so dragged out. This was short, sweet, easy, and delicious! I love cod and there are not too many recipes out there. I was in Publix today, talking to the seafood representative, telling him what a great recipe this was. I am going back so that I can give him this recipe! I hope to find many more great recipes on this site! Lisa

Rated 4 out of 5 by from This was good. This was good. Used the suggestion of another member and put the zuchini with it. My husband hates fish except for fried buffalo, he ate it and didn't say to throw the receipe away. Only this I would do differet next time would be a little salt and pepper on the fish when using the zuchini. I was surprised at the combination of fish, tomatoe, chillis and cheese.

We hosted my husband's sister & children and EVERYONE (including the children) loved it. We substituted tilapia for the cod simply because that is what I had on hand. Great healthy, fast, easy recipe!

I have made this many times with tilapia. My husband and I really like it. Last time I made it, I added chopped yellow pepper and a can of dark red kidney was yummy!

Rated 4 out of 5 by from This was really good. This was really good. I have to say I was quite surprised! My kids don't really like fish unless it's frried, and they thought this was going to be not so great. ALL of them ate it, and cheered at how good it was. Will have to make again for the hubby!

Rated 4 out of 5 by from This recipe turned out very good. This recipe turned out very good. I used Mahi-Mahi fillets and mixed in frozen corn with the diced tomato mixture. I baked it for a few minutes more than the recipe called for, and it was delicious. I think any mild fish would work well. Delicious!

Rated 4 out of 5 by from This was a good recipe. This was a good recipe. I thawed the cod first and after I put in pan and added other ingredients I drained the water that had collected in the pan. I think it would have been soupy if I hadn't. Good flavor and easy to make. Will do again.
