When buying eggplant, look for one that is firm to the touch.
Substitute 1 drained 14.5-oz. can no-salt-added stewed tomatoes for the plum tomatoes.

I like the herbs, but this definitely needed some salt and pepper. I also don't think the cheese was necessary.
Its really healthy, which is what attracted me to this recipe in the first place. I dont know if I did something wrong but I wish the chicken would have had a little more flavor inside. It wasn't too dry though. The vegetable mix with the herbs was my favorite part. I also did not add cheese. Still good though.
