  • Heat oven to 400ºF.
  • Spray bottom and sides of 13x9-inch baking dish with cooking spray. Combine all remaining ingredients except egg. Add egg; mix lightly. Press onto bottom of baking dish.
  • Bake 45 to 50 min. or until golden brown.
  • Let stand 10 min. before cutting to serve.

Make Ahead

Potato mixture can be baked ahead of time. Cool, then refrigerate up to 24 hours. When ready to serve, bake, uncovered, in 350ºF oven 15 to 20 min. or until heated through.

Rated 2 out of 5 by from I thought when I was making this that one egg was insufficient for 40 oz. I thought when I was making this that one egg was insufficient for 40 oz. of hash browns. I think I'm right. The recipe turned out very dry and did not hold together. It was like eating very lightly seasoned hash browns. Also, hash browns come in 16 or 32 oz packages (frozen), not 20 oz. refrigerated as in the recipe x 2. Maybe too many hash browns for the other ingredients? Huge disappointment at my fancy Christmas dinner.

After reading everyone's reviews, I made some adjustments and give this recipe 5 stars. I used 2 packages of hash browns that were 24 oz each. I added another egg and a can of Campbells Cheddar Cheese Soup. Baked accordingly and broiled at the end for a few minutes to crisp the top. Everyone loved it! Will make again and again!

Rated 4 out of 5 by from It was good. It was good. It was a little dry. Next time I would add half of a can of creme of chicken soup and a couple tablespoons of butter. Don't forget to salt the potatoes and I would only add half of the pepper. I would make it again.

I added an extra egg and some milk to make it not so dry, and my husband and I ate it with salt and ketchup. It was good, although nothing overly special. Would be good as a breakfast dish with eggs/bacon/fruit to go with it.

Rated 1 out of 5 by from This is really bland and it's also dry. This is really bland and it's also dry. It's just nothing special at all and basically tastes like hash browns with cheese on top. There are so many wonderful potato recipes but this isn't one of them.
