Fish fillets can be wrapped in parchment paper instead. Soak parchment squares in cold water until soft and pliable. Use to make pouches as directed; tie tops with butcher string to secure. Place on baking sheet and bake as directed.
If avocado leaves are unavailable, use fresh or dried epazote or bay leaves instead.
Serve with a mixed green salad and whole wheat roll to round out the meal.

I had run out of ideas on how to cook salmon. I found this recipe and gave it a try. I didn't follow the recipe exactly. I boiled the guajillo. Then in a blender added onion, garlic and salt to taste. I made the little foil packets and poured the mixture on top. I served it with rice and it was delicious. Maybe next time I'll try it with the nuts & cilantro. Don't know if I'll try it with the dressing.
