  • Combine remaining ingredients; spoon over fish.
  • Bake 20 to 25 min. or until fish flakes easily with fork.

Prepare using red snapper or orange roughy fillets.

Rated 5 out of 5 by from Made this simple dish a few nights ago and it was amazing. Made this simple dish a few nights ago and it was amazing. I followed this recipe step by step along side my 11 year old step daughter and it was a smash hit in my house. It also helps that it was both super healthy and super tasty, as it was my first time cooking Salmon and my boyfriend is a rather picky eater. Alas, they both wolfed it down and he even took some with him to work the next day. my advice? Make this dish, NOW!

I used a little salt, pepper and garlic powder on the salmon as others suggested, used zesty low cal Italian dressing, sprinkled a little Parmesan over the top of everything, and added a few asparagus spears on the sides. It took slightly longer to bake, but the fillets were pretty big. The picture definitely shows uncooked veggies!! This recipe is a keeper!

I have made this dish twice now, both with & without the spinach & it was a hit both times!!! Very pleased that a recipe is as simple as it is delectable!

My DH is in charge of ****** this and he always adds more spinach and mushrooms! The only trouble we have is that the dressing is difficult to find at times---when I see it in the store, I purchase a couple of bottles.

I couldn't find the vinaigrette so I used their Roasted Red Pepper salad dressing and mmmmm it was so delicious. I only wish I would of made more :) Also, my spinach was a little dry but that was probably an error on my fault.

I did marinade the fish for the day in the dressing. Then, seasoned with salt and pepper before adding the salad mixture. It was so good! Must make again!

Rated 5 out of 5 by from LOVE LOVE LOVE this recipe. LOVE LOVE LOVE this recipe. I marinate the salmon in the sundried olive oil dressing overnight. Instead of baking the veggies w/ salmon, I put some dressing in a pan and cook the mushrooms and tomatoes, then add spinach at the very end. Bake salmon for 10 minutes, then broil it until it is done...like it a little crispy on the top. Then serve the over rice pilaf and top with veggies. YUMMY!!!

Rated 5 out of 5 by from I thought that I had salmon but when I got home it ended up as Chicken. I thought that I had salmon but when I got home it ended up as Chicken. Well it was VERY good but I changed a few things. I used mini tomatoes and mini sweet peppers. They not only added flavor but lots of color! :) VERY good everyone at my work came into the break room asking "what smells so good?"
