As I'm single and cooking for one, I decided to halve the recipe (figured that was the safest way to go), and I planned around having all the ingredients. This is one of the finest salmon recipes I have ever tried! I wasn't sure how the sundried tomato dressing would be as I had never used it before, but was pleasantly surprised at how tasty it was. It enhanced the salmon's flavor, and wasn't a distraction. The fresh spinach and the mushrooms were also a plus. I call this an expensive restaurant dish made easy for home! And I will be making it again. By the way, even with half a recipe, I had plenty of leftovers for the next day's dinner!

Before I made this recipe I searched through all the reviews and was weary just because of those few ones that said it wasn't good. Regardless, I decided to make this dish and it was ABSOLUTELY AMAZING. I suggest seasoning the salmon with salt, pepper, garlic powder etc... so it has extra flavor and also buy the salmon fresh - try not to use the frozen pre-packaged salmon fillets. I could not find sun-dried tomato dressing so I used Robusto Italian. It turned out super great and i was so exciting that it tasted so good. Im 3 months pregnant and have been very sensitive to foods but this dish I ate without a problem.

Rated 5 out of 5 by from I made this dish for my boyfriend only instead of salmon I used whitefish. I made this dish for my boyfriend only instead of salmon I used whitefish. It was amazing! I didnt really follow the portion sizes, I just kind of threw it all in together. I used an entire bottle of the dressing and put it in a ziplock bag with fish to marinate while I was dicing veggies. Then I put the fish in the pan, poured the dressing in the bag into a pan and topped it with all the veggies.. It turned out fantastic.. He couldnt stop eating it, and he was raving about it a week later. I just strained the fish when I served it and pulled out the veggies. The oil in the dressing made everything so moist and flavorful. It was great. I would definitely make this again , and would recommend it to anyone..

I followed this recipe step by step along side my 11 year old step daughter and it was a smash hit in my house. It also helps that it was both super healthy and super tasty, as it was my first time cooking Salmon and my boyfriend is a rather picky eater. Alas, they both wolfed it down and he even took some with him to work the next day. my advice? Make this dish, NOW!

I used a little salt, pepper and garlic powder on the salmon as others suggested, used zesty low cal Italian dressing, sprinkled a little Parmesan over the top of everything, and added a few asparagus spears on the sides. It took slightly longer to bake, but the fillets were pretty big. The picture definitely shows uncooked veggies!! This recipe is a keeper!

I have made this dish twice now, both with & without the spinach & it was a hit both times!!! Very pleased that a recipe is as simple as it is delectable!

My DH is in charge of ****** this and he always adds more spinach and mushrooms! The only trouble we have is that the dressing is difficult to find at times---when I see it in the store, I purchase a couple of bottles.

I couldn't find the vinaigrette so I used their Roasted Red Pepper salad dressing and mmmmm it was so delicious. I only wish I would of made more :) Also, my spinach was a little dry but that was probably an error on my fault.
