Baked Stuffed Sweet Potatoes

Yeah, we thought we already had a favorite baked stuffed sweet potato recipe too. Then we tried this one, with melted cheese and toasted pecans.

What You Need

6
 sweet potatoes (3 lb.), baked
1/4
cup  butter or margarine, melted

Tbsp.  apple juice
2
Tbsp.  packed brown sugar
1
tsp.  ground cinnamon
1
cup  KRAFT Shredded Cheddar Cheese
1/2
cup  chopped PLANTERS Pecans, toasted

Make It

HEAT oven to 350°F.

CUT potatoes lengthwise in half. Scoop out centers into medium bowl, leaving 1/8-inch-thick shells. Set shells aside.

MASH potato flesh. Add butter, juice, sugar and cinnamon; beat until fluffy. Spoon into potato shells; top with cheese. Place in shallow pan.

BAKE 20 min. or until heated through. Sprinkle with nuts.

When baking potatoes, oiling the skin before placing the potatoes in the oven will produce crisp-skinned baked potatoes. Or for baked potatoes with softer skins, wrap the potatoes in foil before baking.
Use Your Microwave
To cook the potatoes in the microwave, pierce them with a fork, them microwave, 3 potatoes at a time, on HIGH 10 to 15 min. or until tender. Gently squeeze the potatoes with a pot holder or kitchen towel to test for doneness. Potatoes should give slightly to the pressure. Let potatoes stand in the closed microwave for 5 min. before removing from the microwave.
