Look for whole freshwater trout, such as rainbow, brook or speckled. They vary in appearance and size. Select trout with a firm texture, moist appearance and fresh mild smell. Whole fish should have clear bright eyes and red to bright pink gills.
Ask your fishmonger to clean and scale your trout for you.
Soak corn husks in hot water at least 30 min. or up to 24 hours. Let any leftover soaked corn husks dry out, then store in a cool dry place for another use.
