BAKER'S® Easy Minty Brownies

It doesn't get much better than this: Fudgy chocolate brownies are topped with peppermint-spiked frosting and melty sweetened BAKER'S chocolate.

What You Need

pkg. (4 oz.) BAKER'S Unsweetened Chocolate

cup (2 sticks) butter or margarine, divided

cups sugar

eggs

cup flour

tsp. peppermint extract

can (16 oz.) ready-to-spread vanilla frosting

pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate

Make It

PREHEAT oven to 350°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Grease foil. Microwave unsweetened chocolate and 3/4 cup of the butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Stir in sugar. Blend in eggs. Add flour; mix well. Spread into prepared pan.

BAKE 30 to 35 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool in pan.

STIR peppermint extract into frosting; spread evenly over cooled brownies. Microwave semi-sweet chocolate, remaining 1/4 cup butter and the water in medium microwaveable bowl on HIGH 1-1/2 min. or until butter is melted. Stir until chocolate is completely melted. Cool to room temperature. Spread evenly over frosting; cover. Refrigerate at least 1 hour before serving. Lift out of pan onto cutting board, using foil handles. Cut into 36 squares.

Special Extra

Stir a few drops green food coloring into the frosting along with the peppermint extract.

Note

If using a glass baking dish, prepare as directed reducing oven temperature to 325°F.

I've made these twice, once for work and once for family, and both times have been a HUGE success! No one can believe it's this easy. I actually double the recipe for the top chocolate layer, though, as I find it's hard to cover the whole thing with the original measurements. And I add green food coloring and top with Andes Baking chips.

These brownies were amazing! They tasted like thin mints. Very easy to make. Our family loved them!!!

I used creamy chocolate frosting instead of the vanilla and the brownies tasted almost like fudge! So delicious that my fiance ate almost the entire pan by himself! haha

I make these every year & everyone absolutely loves them! I use a box of brownie mix though(it's alot faster!) & I add green food coloring to the mint & also put chopped up Andes mint candies on top. Yumm-O!!!

These are so good that my son has requested I make them for his birthday! They are great to make in a mini muffin pan for the perfect bite!
