  • Heat oven to 425°F.
  • Mix flour and salt in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Gradually stir in water with fork until blended; press onto bottom of 8-inch square pan.
  • Bake 20 min. or until lightly browned. Reduce oven temperature to 350°F.
  • Beat eggs in same bowl with mixer on high speed until frothy. Gradually beat in sugar until thick and lemon colored. Stir in coconut. Spread preserves over crust to within 1/4 inch of edges; cover with coconut mixture.
  • Bake 25 min. or until golden brown. Cool completely before cutting into bars.

Looking for something sweet? One serving of this treat will hit the spot when served with a cold glass of fat free milk.

Special Extra

For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.

Storage Know-How

Close opened bags of coconut tightly and store in the refrigerator until ready to use.

I used sugar free preserves because I thought they might be to sweet otherwise. You don't even notice that the preserves are sugar free. What is the right way to store any leftovers? I put them in the refrigerator because I wasn't sure if you needed to or not. I will definetely make these bars again. Thanks for the new recipe. I love them!

They were excellent and not very hard to make at all. Your family and guests are sure to love them. I made them with regular raspberry jam and also unseeded raspberry jam. I also used the same recipe and in place of the raspberry jam I used pineapple preserves. They were excellent.

Rated 3 out of 5 by from It had a very interesting taste. It had a very interesting taste. First you get a taste of coconut and then a BURST of raspberry. It was good. However, there was a lot of liquid pooling in the pan after I made it. I think before I made it again I would try to adjust the ingredients just a bit. I may have used too much margarine in the crust.

Rated 3 out of 5 by from This recipe was all right. This recipe was all right. I'm a big fan of bars, especially coconut ones. I made this dessert last night for some guests. The guests liked it, however, I was kind of embarassed about it. It was rather bland and the bottom crust was kind of dry. I used a blackberry preserves for this. Maybe raspberry is better.

I made this for a family get together and all the other cooks in the family raved and even asked me for the recipe!! Needless to say, there wasn't any left!! I did, however, use more preserves than the recipe called for. I thnk that it made for a more moist bar. I definately recommend this one!!!

I used less than the recipe says for that reason, and doubled the preserves after reading the comments about the bars being dry. They came out great. I only wish the recipe made more at once, so they wouldn't disappear so fast!

More raspberry preserves would help but the coconut topping I found crumbled when I cut the cookies into squares. I wasn't thrilled about the crust either. I've made other raspberry bars that I enjoy more & would make instead of these next time.
