When cooking boneless chicken breasts, use a visual test to ensure the meat is cooked through. Cut a small slit in the thickest part of the chicken piece. If the meat is totally white with no pink color, it is safe to eat.
Since this simple, yet elegant, chicken dish is made with lean meat, it can help you and your family eat right.

Made this recipe for my husband, 4 year old, and 19 month old. The kids really liked it, but the adults thought it was pretty bland. I probably won't make it again.
My husband loves balsamic. And I have had balsamic chicken at different restaurants so decided to give this one a try since it seemed so easy. I didn't have any dijon though so I substituded Mustard powder. It turned out very nice and it was very moist. The rice though didn't seem to go and that part seemed bland, I would suggest serving it with something more flavorful than plain white rice. I will definately make this one again.
