  • Heat oven to 450ºF.
  • Combine first 5 ingredients; spread onto bottom of 15x10x1-inch pan sprayed with cooking spray. Cover tightly with foil sprayed with cooking spray.
  • Bake 20 min.; turn potatoes. Add apples; spread to evenly cover bottom of pan. Bake, covered, 10 min.
  • Stir potato mixture; bake, uncovered, 5 min. or until potatoes are tender and lightly browned. Discard sage leaves before serving.

Substitute

Prepare using another cooking apple, such as Golden Delicious or Royal Gala.

Special Extra

Garnish with additional fresh sage leaves.

Note

If serving a crowd, prepare recipe as directed doubling all ingredients.

Every one agreed that it was good, but not good enough that they would want to go out of their way to make it again. I agree, yummy but not amazingly yummy as I was hopping. If you do decide to make it I agree with the fact that you will want to make it in a shallow dish it took quite a while for the potatoes to bake and wasn't ready with the rest of the dishes as I had planned.

Rated 5 out of 5 by from I doubled this recipe and had it Christmas Day. I doubled this recipe and had it Christmas Day. Everyone loved it and wanted the recipe. We will add it to our Thanksgiving table too! The flavors really blend together very well. I tried to put it all in one pyrex dish and it wasn't cooking - so make sure you keep it to one single layer in the oven, either on one big pan or two shallow ones, so the sweet potatoes get cooked.

I didn't use the sage leaves because I had enough of that flavor in the dressing and it was great without it. I did add 1 T of butter, a pinch of lemon peel and a dash of salt and pepper. Yummy

Instead of the balsamic vinaigrette I used Light Raspberry Vinaigrette. And I didn't have any sage, so I just sprinkled some cilantro onto the potatoes. This is probably my favorite sweet potato dish!

If it were a superbly tasting dish the work would be worth it. unfortunately, there was just too much taking in and out of the oven for me.
