  • Mix flour, sugar, baking powder, baking soda and salt in large bowl. Beat egg in medium bowl; stir in bananas, cereal, water, oil and vanilla. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)
  • Pour batter into 9x5-inch loaf pan sprayed with cooking spray.
  • Bake at 350°F for 55 to 1 hour 5 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

Note

For easier slicing, wrap bread and store overnight.

    Made this for brunch - everyone loved it. Took the tip and soaked the bran flakes. Bread was very moist. Would be good with some walnuts - might try that next time. Definitely will make again.

    I thought this was a great recipe. I have been looking for ways to add more fiber into my diet, and this is a great way! I like bran, but you can't even tell the difference in this bread, and it's so moist! Will definitely make it again.
