  • Heat oven to 350ºF.
  • Beat first 5 ingredients in large bowl with mixer until blended. Add bananas and nuts; mix just until blended.
  • Pour into 5 foil mini loaf pans sprayed with cooking spray.
  • Bake 40 min. or until toothpick inserted in centers comes out clean. Cool completely.

Substitute

Prepare using JELL-O Vanilla Flavor Instant Pudding.

How to Store Ripe Bananas

Have too many ripe bananas? Mash bananas, then store 1-cup portions in separate resealable freezer bags. Freeze up to 3 months. Thaw in refrigerator before using to prepare these delicious banana breads.

How to Store

Bake a batch to share! These mini loaves will keep 3 days at room temp or 3 months in the freezer.

Rated 5 out of 5 by from Oh my goodness! Oh my goodness!!!! I ate one of the small loaves by myself. These had the right amount of everything. They definitely need walnuts in them. I am going to try to make other flavors now. I will be making a BATCH of these for my husband to take to the deer lease.

I wanted this a bit lower in calories and fat so I used sugar free/fat free pudding, replaced oil with 1/2 cup apple sauce, and used 2 eggs plus 4 egg whites. They are fabulous and guilt free (sort of)!
