Special Equipment Needed

How to Ripen Bananas

Bananas ripen best at room temperature. To quickly ripen bananas, place the fruit in a brown paper bag and close the bag tightly. The fruit gives off a gas as it ripens. Containing the gas in the closed bag will hasten the ripening process.

Make Ahead

This creamy frosting can be prepared ahead of time. Refrigerate up to 24 hours before using as desired.

Recipe makes enough to frost 13x9-inch cake, 2 (8- or 9-inch) cake layers, or 2 doz. cupcakes.

Ratings & Reviews

Rated 1 out of 5 by from runny gloop followed the recipe exactly including described method... was very runny but refrigerated hopi gfor the best... After four hours plus of chilling still have runny gloom and not the luxurious icing I was expecting. Creamed more butter with a lot more icing sugar and added to stiffen, no joy, still unusable gloom! Very disappointed as I now have no frosting for my cakes!

Rated 3 out of 5 by from Needs Some Work This can be a great recipe, given a few changes. Omit the butter and milk. The milk makes it too runny, and the butter is unnecessary seeing as it is substituted by the banana. Keep milk on hand, just in case your icing comes out a bit too thick (unlikely, but you never know). Make sure to mash the banana well, it doesn't need to be blended. This will help with the thickening factor. Add more icing sugar. This amount isn't enough in my opinion, but this is based on personal taste. Do make sure the brick of cream cheese you are using is softened. Overall, this is a good base. Make a few changes and you'll be fine :)

Rated 1 out of 5 by from Incorrect Proportions Agreed with the first reviewer. Was excited to find a banana cream cheese frosting but even with the use of standard Kraft boxed cream cheese, this is runny and will not hold any shape. Bananas are moist enough...the milk is totally not necessary and no frosting will work with this amount of icing sugar....

Rated 1 out of 5 by from Too Runny Also very runny! May be best to not add the milk or search for another recipe.
