  • Heat oven to 350°F.
  • Mix wafer crumbs, chopped pecans, butter and 1/4 cup brown sugar until blended. Press onto bottom of 13x9-inch baking pan.
  • Beat cream cheese, remaining brown sugar and rum extract in large bowl with mixer on medium speed until well blended. Add eggs; mix just until blended. Stir in mashed banana. Pour over crust.
  • Bake 30 min. or until center is almost set. Cool. Refrigerate 3 hours or overnight.
  • Toss sliced bananas with lemon juice; spoon over cheesecake. Place caramels and milk in microwaveable bowl. Microwave on HIGH 2 min.; stir until caramels are completely melted. Drizzle evenly over bananas; sprinkle with pecan halves.

Substitute

Substitute 2 Tbsp. dark rum for the rum extract.

Special Extra

For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.

It is terrific! You definitely need a good 30 mins to assemble the ingredients and soften the cream cheese & butter, but after that it is easy. Personal note: have an extra TB of butter available as the cookie crust was too dry without it. Add the milk gradually to the caramels, I thought it was a little soupy after I added it all at once, so I added a few more caramels to make up the difference. The rum extract can be cut in half for just a hint of flavor, but don't omit it...it really makes it taste like real bananas foster. Just made this for an unplanned sunday barbeque, and EVERYONE had a piece, that's even better than chocolate! Yum!

Rated 5 out of 5 by from This was absolutely delicious! This was absolutely delicious! I made this for a party and everyone couldn't get enough of it, especially my daughter! I wouldn't change a thing for this recipe; however, since I was rushed for time, I had to cheat and use caramel sauce in a jar instead making the sauce from scratch - it was still wonderful! Now I have to get busy sending the recipe to everyone who requested it from the party! Try it, you'll love it!

Rated 5 out of 5 by from Everybody loved it. Everybody loved it. Tastes exactly like Bananas Foster. I used honey grahams instead of the wafers, spiced rum instead of extract and a whole stick of butter for the crust. I did not use the banana garnish because I didnt think it was really needed. This tastes great the next day but the presentation is prettier the day its made because the caramel sauce starts to break down a little.

I couldn't find the rum at the store and almost made it without it-- I'm sooo glad I didn't -- the rum extract really gave it the best flavor! I will be making this again real soon. Be sure to cut into squares after you cover with caramel or it will be too hard.

This recipe was awesome, I have made it a couple of times, for family and work.....now that is all anyone wants me to bring when we get together....i recommend this to anyone that is looking for a totally new and original cheesecake.

Rated 5 out of 5 by from I slightly altered the recipe and found out that it would make two pies. I slightly altered the recipe and found out that it would make two pies. The caramel gets really hard if it is melted in the microwave, so add milk to it to keep it from getting hard. Tastes great!!

Rated 4 out of 5 by from I loved it but the rest of the family did not. I loved it but the rest of the family did not. Next time I will use less pineapple or maybe swap it out with strawberries or even both. I did however top it off with chocolate syrup.
