I found this recipe at the grocery store near the Nilla wafers, and took a chance. It is terrific! You definitely need a good 30 mins to assemble the ingredients and soften the cream cheese & butter, but after that it is easy. Personal note: have an extra TB of butter available as the cookie crust was too dry without it. Add the milk gradually to the caramels, I thought it was a little soupy after I added it all at once, so I added a few more caramels to make up the difference. The rum extract can be cut in half for just a hint of flavor, but don't omit it...it really makes it taste like real bananas foster. Just made this for an unplanned sunday barbeque, and EVERYONE had a piece, that's even better than chocolate! Yum!
