  • Heat oven to 350°F.
  • Mix wafer crumbs, chopped pecans, butter and 1/4 cup brown sugar until blended. Press onto bottom of 13x9-inch baking pan.
  • Beat cream cheese, remaining brown sugar and rum extract in large bowl with mixer on medium speed until well blended. Add eggs; mix just until blended. Stir in mashed banana. Pour over crust.
  • Bake 30 min. or until center is almost set. Cool. Refrigerate 3 hours or overnight.
  • Toss sliced bananas with lemon juice; spoon over cheesecake. Place caramels and milk in microwaveable bowl. Microwave on HIGH 2 min.; stir until caramels are completely melted. Drizzle evenly over bananas; sprinkle with pecan halves.

Substitute 2 Tbsp. dark rum for the rum extract.

Special Extra

Add 1 tsp. rum extract to the melted caramel mixture before spooning over cheesecake.

    Everybody loved it. Tastes exactly like Bananas Foster. I used honey grahams instead of the wafers, spiced rum instead of extract and a whole stick of butter for the crust. I did not use the banana garnish because I didnt think it was really needed. This tastes great the next day but the presentation is prettier the day its made because the caramel sauce starts to break down a little.

    I loved it but the rest of the family did not. Next time I will use less pineapple or maybe swap it out with strawberries or even both. I did however top it off with chocolate syrup.
