  • Heat oven to 375°F.
  • Mix meat, egg, bread crumbs, bacon bits, 1-1/4 cups cheese and 6 Tbsp. barbecue sauce just until blended.
  • Shape into oval loaf in 13x9-inch pan.
  • Bake 45 min. or until meatloaf is done (160ºF). Spread top of meatloaf with remaining barbecue sauce; sprinkle with remaining cheese. Bake 5 min. or until cheese is melted.

Serving Suggestion

Serve this flavorful entrée with a mixed green salad and hot steamed vegetable, such as green beans.

Prepare meatloaf as directed; cool, then slice. Wrap individual portions in foil. Label, date and place in freezer-weight resealable plastic bags. When ready to serve, unwrap and microwave until heated through (160°F).

Rated 4 out of 5 by from Dont know what happened but it was good.. I made this today and not sure what happened. I followed the directions and I let it cool down. When I took it out of the loaf pan it crumbled!! Otherwise it was very good just mixed the mashed potatoes and corn with it. Will make it again and hope it turns out.

Rated 1 out of 5 by from Looked like a good recipe, something different Didn't care for it. Followed recipe, it came out rather greasy and falling apart trying to get it out of pan. Kinda like a sloppy joe only formed into a loaf. As an after thought maybe next time I may just add bbq sauce on top and not add to meat mixture.
