  • Place chicken in center of large sheet heavy-duty foil; top with remaining ingredients.
  • Fold to make packet.
  • Grill 15 min. or until chicken is done (165ºF). Cut slits in foil to release steam before carefully opening packet.

Substitute

Substitute a red onion ring for the green pepper ring.

I did have this meal on two ********** this last week; with only four changes, not counting using the oven to cook. For the chicken, I chose the pulley-bone cut, deboned and sliced 3/4 through into tenderloin pieces, the vegetables used were both bell pepper and Vidalia onion slices with the pineapple. I found the first time that using only one T. barbeque allowed it to become too diluted and the meat a bit dry, so I increased the sauce amount to about 3 T. For my taste buds, this was very delicious and tender; I feel I "knocked -it-out-of-the-park!"

This sounds so good but who wants to use up a lot of charcoal to grill something for a short time.? Please include oven directions for all the foil pack recipes! It's easier to use the oven and cheaper, also lots less work.

Rated 4 out of 5 by from I made this tonight and it was really good. I made this tonight and it was really good. I did 3 packets w/bbq sauce w/green & red pepper flakes and 3 w/salsa. I did pound the chicken but still left it one for the 15 min (was a bit dry). I wrapped in reg. foil and put a piece of heavy foil on the grill. The sauce still burned so I may have had the grill too hot or left on too long. I think this would be good with any kind of sauce. I will be putting this on my regualr menu list.

Sooo good...The chicken was so tender and juicy, and the pepper and pineapple are the perfect combination w/the bbq sauce. Really easy to make. Heavy duty foil is a must, though (the second time I made this the chicken was burnt to a crisp on the bottom, because I used reg. foil). Great recipe. Will def be doing again.

Rated 4 out of 5 by from Very good and simple recipe. Very good and simple recipe. Two things I would do to improve this recipe. 1. Pound chicken until it's about 1/4 - 1/2 inch thick. Otherwise this takes FOREVER to grill. 2. I would also add a sprig of chives, or a piece of sweet onion in order to 'jazz' this up slightly.
