  • Stir boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved. Stir in cold water. Refrigerate 1 hour 15 minutes or until slightly thickened (consistency of unbeaten egg whites). Gently stir in whipped topping. Pour into 4-cup mold or individual molds sprayed with cooking spray.
  • Refrigerate 4 hours or until firm.
  • Unmold dessert onto serving plate. Garnish with 1/4 cup each additional whipped topping and fresh raspberries, if desired. Store leftover dessert in refrigerator.

How to Unmold Gelatin

Allow gelatin to set several hours or overnight until completely firm. Before unmolding, dip knife in warm water and run knife around edge of gelatin to loosen. Dip mold in warm water, just to rim, for 15 sec. Lift from water and gently pull gelatin from edge of mold with moistened fingers. Place moistened serving plate on top of mold. Invert mold and plate and shake to loosen gelatin. Gently remove mold.

Layered Parfaits

Prepare gelatin mixture twice, using a different flavor of JELL-O for each batch. Layer alternating flavors of gelatin mixture in 12 parfait glasses; refrigerate until set. Makes 12 servings.

Mother had a variety of those beautiful copper colored molds and experimented with different jello flavors. She would be asked when going to a pot luck if she'd make this or the cucumber sour cream mold made with lime Jell-o which this one was served with a meal. When I'd go home to visit, she'd make both of these as they were my favorite!
