Uh oh, potato pancakes. There's a new savory pancake in town. This one's made with crispy bacon, and shredded colby and Monterey Jack cheeses, then served with a smoky BBQ-ketchup sauce.

  • Heat oven to 250ºF.
  • Combine flour and baking powder.
  • Whisk egg, milk and oil in medium bowl until blended. Add flour mixture; stir just until blended. (Do not overmix; batter can be slightly lumpy.) Stir in bacon, parsley and 1 cup cheese.
  • Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using 1/2 cup batter for each pancake; cook until bubbles form on tops, then turn to brown other sides. Transfer pancakes from each batch to baking sheet; place in warm oven to keep warm while cooking remaining pancakes.
  • Top pancakes with remaining cheese. Mix barbecue sauce and ketchup until blended; drizzle over pancakes.

Special Extra

Prepare using OSCAR MAYER Maple Bacon and/or substituting chopped fresh chives for half the parsley.

Serving Suggestion

Serve with sliced tomatoes and hot cooked baked beans.
