  • Add tomatoes, corn and barbecue sauce; mix well. Reduce heat to medium; simmer 15 min., stirring occasionally.
  • Spoon rice evenly into four soup bowls; top with the meat mixture and VELVEETA. Sprinkle evenly with green onions.

Special Extra

For spicier flavor, stir in hot sauce or ground red pepper (cayenne) to taste.

I added chili powder, garlic, cayenne pepper, coriander, hot sauce, and worchestire sauce to the meat, and fresh cilantro when I added the tomatoes. It made it the perfect spicy and BBQ taste, and the velveeta made it the perfect amount of cheesy!! Definetly on the list of our favorites!!!

I used soy crumbles instead of the beef since I am a vegetarian and also subbed shredded Cheddar cheese. Very easy to make and had a wonderful flavor. It is like having all of your summer favorites in a bowl!

I think the reason it was so yummy was because instead of barbecue sauce, I mixed a packet of chili powder in with the ground meat. I also used ground turkey instead of ground beef. My guests and husband thoroughly enjoyed the meal!

Rated 4 out of 5 by from Changed this around a little but it was delish. Changed this around a little but it was delish. No green pepper, no tomatoes, no BBQ sauce. Added garlic, minced. Used Brids Eye Stir Fry Veggies with sauce packet. Used Kraft shredded Mexican style cheese instead of Velveeta.

I took it nextdoor for them to try it and nobody liked it. It had a very strange flavor to me but I also thought it was eatable.

Rated 3 out of 5 by from Flavor just wasn't great. Flavor just wasn't great. I like BBQ sauce but this had too much of that flavor. With the tomatoes, it seems like it should be a mexican dish to me. Don't think I'll make this again.
