Rated 5 out of 5 by from These were delicious. These were delicious. My husband and I loved them. I cooked the lean ground beef then set off to the side. I then sauteed the veggies to our liking, since I like my veggies very tender, then I added the beef back into the pan and sauteed a bit longer. The 1/2 cup of BBQ sauce was the perfect amount. I used Kraft Honey BBQ sauce. I then topped with shredded cheese, sour cream and guacamole. Yum!!!!!

I told my picky 6 year old they were cowboy tacos and he thought they were the greatest. I sliced the onion and red pepper very thinly, it makes it harder for the kids to pick out and if your lucky they won't even notice that they are in there.

I used leftover roast and shredded it - then added bbq sauce - also sauteed some red onion with the red bell pepper....more like a brisket taco - it was GREAT! If it tastes too much like sloppy joe try some thinly sliced steak and sautee it -gives it more of fajita flare.

And as always, for more flavor, I add about a half cup of jarred salsa to the meat after its been browned. It moistens it and makes it taste super yummy.
