  • Heat oven to 425°F.
  • Use vegetable peeler to peel carrots into thin lengthwise slices. Discard any remaining peeled carrot chunks.
  • Place carrot slices in medium bowl. Add barbecue sauce; mix lightly.
  • Cover 2 rimmed baking sheets with parchment; spray with cooking spray. Spread carrots into single layer on prepared baking sheets. Bake 8 min. Remove baking sheets from oven.
  • Reduce oven temperature to 225°F.
  • Return carrots to oven. Bake 1 hour; cool completely.

Important Note

After reducing the oven temperature as directed in recipe, do not return the carrots to the oven until the temperature in the oven drops to 225°F. This will prevent the carrots from burning at the higher temperature.
