  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.
  • Add water, corn and barbecue sauce to same skillet; stir. Bring to boil, stirring occasionally. Stir in rice.
  • Top with chicken; cover. Cook on low heat 5 min.

Rated 5 out of 5 by from So tasty and easy to make, my nephew and his college buddies wanted the recipe! So tasty and easy to make, my nephew and his college buddies wanted the recipe! I use vegetarian chicken pieces and canned corn, so I always have the ingredients and the time to make it. Have with a glass of milk, and you can't ask for a much healthier meal! (I do cut the bbq sauce down a little for sodium reasons, then let everyone add extra if desired.) I've also substituted many other kinds of sauces, and it still turns out great.

Rated 4 out of 5 by from Flavor was awesome! Flavor was awesome! I cut the chicken into chunks instead of leaving pieces whole.. Also would recommend either cooking the rice longer, or trying white rice instead. The rice was no where near being cooked all the way through in the time the recipe alotted. Would definitely make again!
