  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 3 min., stirring occasionally.
  • Add water, barbecue sauce and rice. Bring to boil.
  • Reduce heat to medium-low; sprinkle with pepper and zucchini. Cover. Simmer 10 min.

Rated 1 out of 5 by from This recipe was TERRIBLE. This recipe was TERRIBLE. It's been three weeks since I made it, and my husband still talks about how much he hated it. DO NOT MAKE IT! The BBQ sauce and the zucchini did not go together, and the rice took on a strange flavor with the BBQ sauce. It looks good in the picture though. What a waste of grocery ingredients

I have made this recipe several times, I think I've used a different flavored BBQ sauce every time and every time it is equally as good. I've also used instant brown rice instead of the white rice. This is such an easy dish and works well for using on Core for Weight Watchers.

Rated 4 out of 5 by from I love this recipe! I love this recipe! i first made it with green peppers and onions and it was great! We have 3 small children and they loved it. We don't like zucchini so that was fine. You do have to add your own seasonings and sweeten the sauce a little if you like you barbecue sauce sweet.

Rated 5 out of 5 by from Tasty! Tasty! I used regular rice and just precooked it in the rice cooker. I also used a package of frozen stir-fry veggies instead of just the red pepper and zuchinni. My husband like it a lot; there were no leftovers. Next time I will try it with the pineapple.

Rated 5 out of 5 by from This meal was a big hit. This meal was a big hit. I served it with whole wheat tortilas and made it into a wrap with some grated cheese and lettuce.. I also used red green and yellow peppers and onions in the skillet. I used honey BBQ sauce which gave it a good flavor

I used a milder barbeque sauce and used yellow squash instead of zucchini and liked the result much better as far as complimentary flavors. I have made it two or three times. My family likes it and it is certainly a quick and fuss free meal.

Rated 4 out of 5 by from I made this tonight. I made this tonight. I used Honey Hickory Smoke BBQ instead of regular and I added some season salt to the chicken and a little black pepper. It was great! Even my two little picky eaters loved it.
