  • Cook onions and peppers in 1 Tbsp. of the oil in medium skillet on medium-high heat until crisp-tender. Remove from skillet; set aside.
  • Add remaining 1 Tbsp. oil and chops to skillet. Cook 8 to 10 minutes or until chops are cooked through, turning over after 5 minutes. Meanwhile, prepare stuffing as directed on package.
  • Spoon onion mixture over chops; top with barbecue sauce. Cover with lid. Reduce heat to low; cook until sauce is heated through. Serve with stuffing.

Substitute

Prepare as directed, using STOVE TOP Corn Bread Stuffing Mix.

I did not include the green peppers and the pork chops were very tender. I served it with cornbread stuffing and candied sweet potatoes. I will definitely serve this dish again.

Rated 4 out of 5 by from My husband loved this recipe. My husband loved this recipe. I am not a hug fan of pork chops due to the different texture, but he loved it. I would most likely use chicken next time. We ate this with homemade rolls and the stuffing was perfect with it!
