  • Mix dressing, barbecue sauce and mustard in large bowl.
  • Add all remaining ingredients except for the bacon; mix lightly.
  • Sprinkle top of salad with bacon. Serve immediately or refrigerate until ready to serve.

Look for firm, smooth, well-shaped potatoes that are free of wrinkles, cracks and blemishes. Avoid any with green-tinged skins or sprouting "eyes" or buds.

The sauce/dressing reminded me of the dressing that goes on Carl's Jr.'s southwestern chicken salad (that they may not have any more--it had black beans on it). My husband, who is not a fan of potato salad, didn't like it (no surprise). He'd prefer no corn, celery, or peppers, no BBQ sauce, and smaller potato pieces. Then maybe he'd eat it. But I thought it was the best potato salad ever.

We usually have everything plain and seperated. When I red the ingredients I knew he would like it. So, without telling him I made it and served it up. He LOVED it. The sauce mixture has the greatest taste. It was so good. He even asked me to make it for his fathers retirement party! It was a big hit!

A nice variation from everyday potato salad. We served it hot. When I make it again, I will carmelize the onion, corn, and red pepper if I plan to serve it hot. I also would add some cheese, maybe monterey jack or sharp cheddar. Overall though, this is a great recipe and was a big hit at our cookout.

I took it to my family reunion and even my daughter who doesn't really like the traditional potato salad loved it. The recipe is a wonderful variation of an old standby and it is very easy to make. I used real bacon bits for the bacon. Very delicious.

I just made this recipe for "a dish to pass" and I wasn't too sure about making it because I didn't sound like it was going to be saucy/creamy enough, but it was perfect! Everyone loved it!! I was also very impressed with how easy it was to make and put together!

I served it for a very large picnic when I was 38 weeks pregnant. It was quick and easy and was given great reviews. It is a wonderful twist on your typical potato salad.

Rated 5 out of 5 by from This was fantastic! This was fantastic! Great new taste for an old stanby dish to go along with a grilled entree. This is good enough to take to a church pot luck supper. I think it would even taste good warm in the Winter.
