  • Heat grill to medium-high heat.
  • Bring water to boil in medium saucepan. Add polenta in thin steady stream, whisking constantly. Cook on medium-low heat 4 to 5 min. or until thickened, stirring constantly. Remove from heat; stir in Parmesan and butter. Pour into 9-inch disposable foil pie plate sprayed with cooking spray; set aside.
  • Combine eggplant, red peppers, zucchini, onions and tomatoes in large bowl. Pour 1/4 cup dressing over vegetables; mix lightly. Place large piece of heavy-duty foil on grill; pierce foil with fork at 1 inch intervals. Spoon vegetables onto foil. Grill 5 min. or until cooked through, stirring occasionally. Remove from grill; toss with remaining dressing, basil and black pepper.
  • Scatter cream cheese cubes over polenta. Place pie plate on grill; cover grill with lid. Grill 3 to 5 min. or until cream cheese melts. Cut into wedges; serve topped with vegetables mixture.
