  • Heat oil in large saucepot on medium heat. Add ham; cook and stir 3 minutes.
  • Add tomato sauce and sofrito sauce base; mix well. Cook 5 minutes. Add broth and pumpkin; mix well. Cover. Bring to boil. Stir in alcaparrado condiment and beans. Return to boil. Reduce heat to low. Season to taste with pepper.
  • Simmer, uncovered, 15 minutes or until sauce is slightly thickened. Serve over hot cooked rice.

Alcaparrado Condiment

Mix 1/3 cup chopped stuffed green olives and 2 Tbsp. capers. Refrigerate until ready to use. Or alcaparrado is available in jars in most Latino grocery stores.

Special Extra

If necessary to thicken sauce, mash several beans and pumpkin pieces; add to stew.


Substitute acorn squash for calabaza.

    I don't know what the other reviews said, but I thought this dish was delicious. I will probably have to mince the olives and capers to get my husband to eat it, but they added a nice flavor. Had to have seconds!

    Esta receta está bien, solo que yo no le añado tantas o ninguna aceitunas ni alcaparras. Sí le agrego "celery" le da un sabor exquisito y con ello añades fibra (lo cual es muy bueno para la salud). Además le agrego sazón con cilantro para darle mejor color y le agrego tambien un sobrecito de Cochinito (como el sazón pero con sabor a jamón - cuando no tengo jamón solo uso 2 sobrecitos de estos, pruébalo). Además, si dejas hervir lo suficiente las habichuelas, estas espesarán sin tener que majar la calabaza ni las habichuelas. Un truco que hago para que espesen mas rapido es agregar la calabaza desde que echo el sofrito, así se va ablandando y espesa más rapido las habichuelas. REC
