Roll-ups can be prepared ahead of time. Do not cut into slices. Wrap roll-ups individually in plastic wrap. Refrigerate up to 24 hours. Slice just before serving.
Add a dash of hot pepper sauce or 1/2 tsp. chopped canned chipotle peppers in adobo sauce to the rice mixture before spooning onto tortillas.
