  • Cook meat in hot oil in large nonstick skillet on medium-high heat 2 min. or until evenly browned, stirring frequently. Remove meat from skillet; set aside.
  • Add next 4 ingredients to skillet. Bring to boil. Stir in rice; return to boil.
  • Stir in meat; top with cheese. Cover. Simmer on medium-low heat 8 to 10 min. or until heated through.

Substitute

Substitute 1 undrained 14-1/2-oz. can diced tomatoes for the chopped fresh tomatoes.

What I find most disheartening about most of your recipies is that you always seem to use the "expensive" cuts of meat as though nothing else will do. Of course, the diversity of your email list already points out that there are other cuts just as desirable or even more desireable. In the dish I am responding to, I find that chuck steak does a better job tastewise. I've made this same dish before it came to me via your kind emails. I might add that "those" fancier cuts of beef are best enjoyed as "THE STEAK" for which they are cut. Thanks for reading.

Rated 5 out of 5 by from OH YEAH! OH YEAH! Now this is what I'm talking about! A quick, delicious, satisfying meal! I substituted Reduced fat Velveeta and tried to substitute Minute Instant Brown Rice in place of the white by let in sit covered off the burner for 10 minutes after simmering it on the heat for 10 minutes. The consistency wasn't quite right, but it tasted delicious. Perhaps someone from the Kraft Kitchen could suggest a way to make this dish with brown rice? I'm excited to try this with venison, too.

Even my husband made a comment on how well it smelled and he couldn't wait to eat it. That all changed when we sat down to eat it. It did not taste as well as it smelled. It was blan and lacked something. When I reheated it I added cheese and salsa to the mix. That made it taste better. The only way I would make it again is if I added salsa and cheese when I put it together.

I stayed out of the kitchen until she had it prepared and the dining table set. The aroma that filled the living room was that of an authentic Italian kitchen. She substituted the white rice with brown rice and used all fresh ingredients. Delicious!!! This dish will become a staple at our place. The rice mixture itself would make a great side dish. Katie, you may cook for mom anytime!

Rated 4 out of 5 by from I didn't have fresh tomotoes on hand so I used one can of diced tomatoes, drained. I didn't have fresh tomotoes on hand so I used one can of diced tomatoes, drained. It still tasted very good. I also use less garlic than the recipe calls for. Served with a side salad and sourdough bread it makes for a hearty meal. I cook my meat only until it starts to get brown and let the rest of the cooking take place while the rice is being prepared in the broth, but I like my meat medium as opposed to really cooked.

I am a Weight Watchers member but I can fit this into my diet plan and you can believe I am going to! I usually cook for our local police, EMS staff etc for Halloween night and I have just found the recipe I will be using this year! I really think the guys will like it as well as I did! This one will definitely be marked as "one of my favorites!" And it is really easy to prepare! Try it and you won't be sorry!

I used ground beef instead and ommitted the tomatoes due to family preferences.. it turned out to be yummy reguardless! Next time I make it though I'll need to find a substitute for the tomatoes or add more liquid because without them the meal was slightly more dry than I had anticipated.

Rated 5 out of 5 by from This is one of my favorite's! This is one of my favorite's! The combo of the ingredients tastes just like real bruschetta. This recipe has become one of my "regulars". The mozerella subsitution sounds like a tasty alternative; I may try it even though I think the original ingredients are perfect. :) I would highly recommend you try this meal!
