  • Brown meat in large skillet; drain. Stir in half each of the Mexican VELVEETA and salsa; cook until VELVEETA is completely melted, stirring frequently.
  • Spoon scant 1/4 cup meat mixture down center of each tortilla; roll up. Place, seam-sides down, in single layer in microwaveable dish. Top with remaining salsa and VELVEETA; cover with waxed paper.
  • Microwave on HIGH 4 to 6 min. or until VELVEETA is melted.

Use Your Oven

Heat oven to 350ºF. Assemble enchiladas as directed using 13x9-inch baking dish sprayed with cooking spray. Bake 20 min. or until enchiladas are heated through and VELVEETA is melted.

Substitute

Try leaner cuts of ground beef, such as ground round or ground sirloin, in place of ground beef.

Worried that the salsa and mexican cheese would not be flavorful enough for our spicy tastes, I added a packet of taco seasoning to the ground beef before I added the cheese and salsa. The only problem I encountered was cutting the remaining cheese into cubes - it did not melt easily in the microwave so next time I will mix the salsa and cheese and melt it prior to putting it on top of the enchiladas.

Rated 4 out of 5 by from This was wonderful. This was wonderful. Altough I didn't follow the directions - that's why I gave it a 4 star. I added taco seasoning and 1/2 the amount of salsa and cheese. Then I added the remainder of the salsa and cheese to the top - but I melted before pouring over. This would make excellent filling over nachos. I baked in the 400 Degree oven for 15 minutes (covered) and it was WONDERFUL. My whole family loved it. I will definitely make again.

I ask my husband to rate everything I make from 1-5 and I put it on my recipes so I know if I should make things again and he said this recipe makes everything he ever rated a 5 drop down to a 4. Needless to say I'll be making this a lot. It was very very good. I served it with canned corn that had red and green peppers in it as a side. I highly recommend this recipe! Oh and it was so quick and easy!

I did use Ground beef (not hamburger) and added onions and some taco seasoning when I fried beef. Also always melt cheese and first. Usually I use the shredded cheese melts a lot faster if only makeing enough for 2 people. Tasted good to us. Will be making again.

Rated 5 out of 5 by from My husband and I loved this. My husband and I loved this. I added a some rotel and onion in addition to the salsa and cheese. Also, I will melt the velvetta and salsa together to form a sauce like the one pictured to go over the enchiladas. Otherwise, this was wonderful!

I didn't have the special Velveeta, so I used taco seasoning mix in with the meat and salsa. It gave it a nice flavor. The topping was a little sparse, but otherwise it made for a nice easy meal.
