  • Melt butter in large saucepan on medium heat. Add onions and garlic; cook 3 min. or until crisp-tender, stirring frequently. Add flour; mix well. Cook 2 min. or until hot and bubbly, stirring frequently.
  • Stir in milk until blended; bring to boil, stirring constantly. Cook and stir 3 to 5 min. or until thickened. Simmer on low heat 5 min., stirring occasionally.
  • Add remaining ingredients; mix well. Cook 5 min. or until VELVEETA is completely melted and soup is heated through, stirring constantly.

I can't wait to try it next time in a bread bowl--we always make popcorn and that is excellent too. If the taste is too strong,(as rated on 1/13/08 by A cook) try using a milder beer. I love a mild beer and always drink and use Grain Belt--it was my Grandpa's favorite and I grew up on it, and it is still my favorite beer too. I've made other beer cheese soups with stronger beer and didn't care for those either, but Grain Belt is very mild. Excellent recipe!!!!!

Rated 1 out of 5 by from UGH! UGH! i really didnt think you could go wrong with this......cheese....beer.....boy was i wrong! I used a dark beer which made it very beer-y...but since they didnt specify, i put a little of what i was drinking in, which happened to be that. And the Velveeta cheese.....tasted so fake and nasty. I will NOT be making this again......also, there was only enough for me and my boyfriend, if we really were to like it, there would be no more!(which happened to be a good thing....)

My husband and I love this soup...we like to experiment with different beers each time. The only negative about this soup is that we get bellyaches shortly after eating, but that's usually alleviated if we take some Tums beforehand. I think all that cheese is a little much for our stomachs to handle, but the taste is definitely worth it! Oh, and try this soup in a bread bowl...it's delicious!

The only thing that I did not add was the hot pepper sauce as I didn't think it was needed. Otherwise, I made it exactly as the recipe called for. However, was very disappointed that it made only one-half cup each for my husband and myself!!! The flavor was very good. I did add fresh-ground black pepper also. Would make it again but will have to double or triple the recipe!

Definitely making it again, it was delicious, just make sure to use a good hearty beer that you enjoy drinking, and I suggest doubling the recipe as it's so good you definitely want more!

I thought this one may be close, however once made it did not compare at all. I made it exactly like the recipe, but the end result just did not taste right, especially after having it elsewhere. Would not reccomend.

If you like cheese fondue, you'll love this soup. it warms you from the inside out, and it's filling enough to be a great dinner served with a salad. I like to add some shredded cheese in addition to the velveeta to give it more depth
