This was totally delicious....I've never had beets and citrus together...but who wouldve though it would be this good...the vinagrette was a bonus...I didn't add the nuts and it was still great.....wonderful meal for those that are watching their weight....Very Very Good......

Although I made a few changes in the ingredients. I used mandarin oranges, julienned beets, which I drained, and combined with the onion and dressing. I marinated this in a covered bowl for 2 hours in the refrigerator. Then I tossed it with the spinach and put on serving plates. I sprinkled roasted sunflower seeds and crumbled feta cheese over the top.

The first time, I added the dressing just before serving. All the other times, I have let each guest add their own dressing and it worked out much better. It has now become my favorite green salad for family and guests.
