  • Cut beets into 1/4-inch thick slices, then cut each slice into quarters. Add to large saucepan of boiling water; simmer, partially covered, on medium heat 20 min. or just until beets are tender.
  • Use slotted spoon to transfer beets to colander; drain. Reserve 1/4 cup of the cooking water for later use; discard remaining water.
  • Heat vinaigrette in same saucepan on medium heat. Add onions and garlic; cook on medium-low heat 10 min. or until onions are tender, stirring frequently
  • Add beets to onion mixture along with the cumin and reserved cooking water; cook and stir 2 min. or until heated through.
