Bento is a Japanese box lunch traditionally packed in a partitioned box. In Japan, a bento box usually has 4 components; carbohydrates, proteins, vegetables and fruits. In this instance, the 5 MyPlate food groups (protein, dairy, grains, vegetables and fruits) are represented. A bento box should also be visually appealing as well, using a variety of colors.
For a more vibrant green color, blanch the broccoli before using. To blanch the broccoli, add the florets to pan of boiling water; cook 3 min. Drain broccoli, then immediately add broccoli to bowl of ice water to stop the cooking process. Drain well, then refrigerate until ready to serve.
