  • Mix graham crumbs and butter; press onto bottom of 9-inch springform pan.
  • Mash 2 cups berries with 1/4 cup sugar in medium bowl. Beat cream cheese and remaining sugar in large bowl with mixer until blended. Add mashed berries; beat on low speed just until blended. Gently stir in COOL WHIP; spoon over crust.
  • Refrigerate 6 hours. Run knife around rim of pan to loosen cake; remove rim. Top cheesecake with remaining berries.

Rated 4 out of 5 by from Great flavor! I made this for the 1st time for a family get together on Memorial Day this past weekend. I added a little lemon zest & a little lemon juice to both the mashed berries & cream cheese mixture. I also used chocolate graham cracker crumbs for the crust. After refrigerating overnight I plated it the next afternoon & noticed it wasn't quite as firm as it should be so I put it in the freezer at home & when we got there. It was mostly frozen when served & everybody loved it! It was 95F so it was really nice to have a cold dessert to enjoy. I'd recommend using fewer berries in the mashing to offset it from being to soft.

Rated 1 out of 5 by from Berry bliss run away cheesecake Made this recipe this week for a family get together and was so disappointed and embarrassed when I removed the side of springform pan and placed on cake plate. The contents quickly oozed like lava flowing. I did follow recipe exactly so I don'[t understand why this happened.

It turns out perfect everytime, except when I don't whip the cream cheese long enough to get the sugar incorperated, or don't add quite enough sugar to make the mix thick enough before adding the berries and all they're juices.
