  • Crush 2 cups of the berries in medium saucepan with fork or potato masher. Add remaining 2 cups whole berries, the sugar and tapioca; mix well. Stir in water. Let stand 5 min.
  • Bring to full boil on medium heat, stirring constantly. Pour into serving bowl. Cool slightly; cover with plastic wrap.
  • Refrigerate 3 hours or until thickened. Spoon evenly into 6 dessert dishes. Serve topped with the whipped topping.

Special Extra

Spoon over a serving of vanilla ice cream or angel food cake.

Rated 4 out of 5 by from crustless blackberry/raspberry cobbler I make a similar recipe for a quick crustless cobbler and also gives an answer to don't have tapioca substitute. I omit sugar and tapioca and stir in (1) 3oz. pkg. jello when water starts to boil, remove from heat and immediately refrigerate until thickened. For blackberries I use black cherry jello; for raspberries raspberry or strawberry jello also strawberry for strawberries. I also use this recipe for trifles and use cool whip and pound cake or angel food cake between layers when there isn't enough cake left for 8-10 servings and last minute desserts.
