    I made this chicken salad with sweetened cranberries and omitted the basil. It's very good for lunch or dinner. You don't need the cheese though, with any berry chicken salad the cheese is not necessary.

    I used 1 1/4 cup roasted chicken. I used 20 large red grapes, halved. I doubled the basil and mayo. I didn't double the onion per our taste preferences. That was enough for two large sandwiches served on whole wheat bread, so would easily make 3 sandwiches. It was good without cheese.
