Why let Monday have all the meatless fun? Good any night, these smart burritos are filled with cheese, Boca Ground Crumbles, veggies and a burst of fresh cilantro.

What You Need

cup frozen BOCA Ground Crumbles
2
cups chopped mixed fresh vegetables (small broccoli florets, carrots, green peppers, onions)
1/2
cup fat-free reduced-sodium vegetable broth
1-1/2
tsp. chili powder
1/2
cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
1/4
cup chopped fresh cilantro
2
 high-fiber whole wheat tortillas (8 inch), warmed

Make It

COOK ground crumbles, vegetables, broth and chili powder in large nonstick skillet on medium heat 8 to 10 min. or until crumbles are heated through and vegetables are crisp-tender, stirring frequently. Remove from heat.

STIR in cheese and cilantro; spoon down centers of tortillas. Fold in opposite sides of each tortilla, then roll up, burrito-style.

Prepare using chopped vegetables purchased from the salad bar in your supermarket.
Note
If necessary, moisten cooked vegetable mixture with 1 Tbsp. water before stirring in cheese and cilantro.
Substitute
Substitute zucchini and/or fresh mushrooms for any of the vegetables.
