  • Line 9-inch square pan with foil, with ends of foil extending over sides. Crumble cupcakes finely into prepared pan. Use moistened fingers to lightly press cupcake crumbs into even layer on bottom of pan.
  • Beat cream cheese and butter in medium bowl with mixer until creamy. Add sugar and vanilla; mix well. Gently stir in COOL WHIP and 6 Tbsp. sprinkles; spread over crust. Top with remaining sprinkles.
  • Refrigerate 4 hours or until firm. Use foil handles to lift cheesecake from pan before cutting into bars.

Rated 4 out of 5 by from Pretty good Made almost as directed. Using another review I increased the amount of the cake base, but kept the filling as given. I also served this as a cake not bars. From the recipe I made 3x3 inch pieces. Here is a handy tip: if you don't have unfrosted cupcakes hanging about the kitchen, pick up a "picnic cake" at your local grocer's bakery. (I buy these from the day old table all the time & pop them in the freezer for a fall back if I do not have a dessert item on hand. Where I live frosted cake layers in 9x9 disposable pans are sold as "picnic cakes.") I just scraped the frosting off with a butter knife & used that. Worked wonderfully well.

Rated 3 out of 5 by from Okay Not enough cupcakes and too much cream cheese in this recipe. Maybe 9 to 12 cupcakes and 12 oz. of cream cheese would have been better. It tasted okay and looked great. I used red and blue sprinkles and took it to our family 4th of July party.
