  • Cook bacon in large saucepan on medium heat 12 min. or until crisp, stirring frequently. Drain bacon, reserving 3 Tbsp. of the drippings in pan. Drain bacon.
  • Meanwhile, add onions, celery, carrots and garlic to bacon drippings in saucepan; cook and stir until crisp-tender. Stir in beans, broth and pepper. Simmer 15 min., stirring occasionally.
  • Pour soup into food processor or blender container; cover. Process until pureed. Return to saucepan. Stir in bacon; cook until heated through, stirring occasionally.

How to Chop Onions

Cut a peeled whole onion into thin slices about 1/4 inch thick. Stack two or three slices, then make several crosswise cuts, about 1/4 inch apart, in both directions down through onion slices.

Soup was very good, I added a package of smoked sausage when I added the bacon just to make it chunkier. I would suggest pureeing only half the black beans, the texture was too paste like, not at all like the photo. I will make this recipe again, but with some more tweaks.

Rated 4 out of 5 by from Very good! Very good! I love that you can get all those good veggies in without your picky eaters noticing because it's pureed. We had all sorts of add-ons on the table such as: rice, sour cream, cheese, diced red pepper, and we left the bacon as an add-on to keep its crispiness.

Rated 3 out of 5 by from This is soup for a trencherman. This is soup for a trencherman. The bean, bacon, and sherry flavors matched up very well for me but less so for my wife, who prefers lighter and spicier fare. Use thickly-sliced bacon and don't omit the sherry or you'll have soup-from-a-can.

Rated 5 out of 5 by from Excellent Soup, will definitely make again. Excellent Soup, will definitely make again. Did cut down on the bacon, only used 6 slices of Amish Bacon. Also, cut down on the cayenne to 1/4 tsp. I added some salt & pepper. Used mostly organic ingredients.
