What You Need

slices OSCAR MAYER Lower Sodium Bacon, cut into 1/2-inch pieces

large onion, chopped

stalks celery, thinly sliced

carrots, finely chopped

cloves garlic, minced

cans (15 oz. each) black beans, rinsed, drained

can (14-1/2 oz.) low-sodium chicken broth

tsp. ground red pepper (cayenne)

Make It

COOK bacon in large saucepan on medium heat 12 min. or until crisp, stirring frequently. Drain bacon, reserving 3 Tbsp. of the drippings in pan. Drain bacon.

MEANWHILE, add onions, celery, carrots and garlic to bacon drippings in saucepan; cook and stir until crisp-tender. Stir in beans, broth and pepper. Simmer 15 min., stirring occasionally.

POUR soup into food processor or blender container; cover. Process until pureed. Return to saucepan. Stir in bacon; cook until heated through, stirring occasionally.

Cut a peeled whole onion into thin slices about 1/4 inch thick. Stack two or three slices, then make several crosswise cuts, about 1/4 inch apart, in both directions down through onion slices.

Does anyone know what the serving size is? The soup is very tasty. But if the serving size is 1/2 cup it's a very high calorie soup and I can't make it again.

Excellent Soup, will definitely make again. Did cut down on the bacon, only used 6 slices of Amish Bacon. Also, cut down on the cayenne to 1/4 tsp. I added some salt & pepper. Used mostly organic ingredients.

Very good! I love that you can get all those good veggies in without your picky eaters noticing because it's pureed. We had all sorts of add-ons on the table such as: rice, sour cream, cheese, diced red pepper, and we left the bacon as an add-on to keep its crispiness.

Soup was very good, I added a package of smoked sausage when I added the bacon just to make it chunkier. I would suggest pureeing only half the black beans, the texture was too paste like, not at all like the photo. I will make this recipe again, but with some more tweaks.

One of the Best soups I've had in awhile! Very good flavor, very hearty and the crushed red pepper gives it a zing!
