I used persimmon(Fuyuu..hard and crunchy)instead of mango because I knew ripe mango and Kaki(persimmon)taste similar.I wanted to use bountiful harvest of Kaki from my garden. Dressing was plum sauce/hoisin sauce/rice vinegar, also added maitake mushroom and finely chopped celery and walnut. It was great.
