    I have made 2 batches of this salad just this week alone! My husband and I just love it spooned onto tortillas drizzled with salsa. I do NOT add the ranch dressing. It is okay with it, but I like it better without.

    a little too much time i'll use just a little less than 1/2 cup. skimped on the cilantro - used about half of what recipe called for, but i'm not a big fan of the bright cilantro flavor when it stands alone like in this recipe. i cut up red peppers into bite size instead of strips. goes absolutely GREAT with tortilla chips. try adding some avocado and serve as a side or as a new, funky dip at a pitch in!

    We love cilantro and this is a delicious salad. I used brown rice and added a few dashes of hot sauce and some salt and pepper because it was a little bland. Definitely will make again.
