I love this recipe. The only thing I do different is use 2 cans of refried black beans and 1 can of the whole beans. That way I don't have to mash any beans. This is just fabulous and so easy!
We had this for lunch today and it was great! I added another can of beans, which I pureed like the first two. My husband & I both loved; my 11 year old son enjoyed the flavor, but said the soup was "mushy" and decided he didn't like it. I will definitely make again for hubby and I! Hopefully my son will learn to like it a little more. Love that it's healthy with lots of protein and fiber. Great for a cold day!
