Black Beans

What You Need

cups  dried black beans, sorted, rinsed
2-1/2
qt.  (10 cups) water, divided
2
medium  onions, chopped (about 2 cups)

slices   OSCAR MAYER Bacon, finely chopped
3
cloves  garlic, minced
2
tsp.  dried oregano leaves
1
tsp.  salt

Make It

BRING beans and 1 qt. (4 cups) of the water to boil in large saucepan. Boil 5 minutes. Remove from heat; let stand 1-1/2 hours. Drain well.

RETURN beans to saucepan. Add onions, bacon, garlic and remaining 1-1/2 qt. (6 cups) water. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer, partially covered, 1 hour. Skim off any foam.

STIR in oregano and salt. Continue cooking an additional 15 to 20 minutes or until beans are tender.

Serve beans over hot cooked rice topped with your favorite KRAFT Shredded Cheese and/or BREAKSTONE'S or KNUDSEN Sour Cream.
Creative Leftovers
Don't throw out the water when you drain the cooked beans! The nutrient-rich broth can be used when making soups or for cooking rice.
