  • Bring beans and 1 qt. (4 cups) of the water to boil in large saucepan. Boil 5 minutes. Remove from heat; let stand 1-1/2 hours. Drain well.
  • Return beans to saucepan. Add onions, bacon, garlic and remaining 1-1/2 qt. (6 cups) water. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer, partially covered, 1 hour. Skim off any foam.
  • Stir in oregano and salt. Continue cooking an additional 15 to 20 minutes or until beans are tender.

Yo los pongo a ablandar en una Crock-Pot, les hecho una cebolla pequena entera y una hoja de laurel, cuando estan blandos, le hago un sofrito con aceite de oliva, cebolla, ajos y pimientos verdes, le agrego oregano,comino y sal. Cuando estan espesitos apago el fuego y le hecho un poco de aceite de oliva y vinagre.
