  • Cook bacon in large skillet on medium heat until crisp, turning occasionally. Drain bacon, reserving 2 Tbsp. of the drippings in skillet. Crumble bacon; set aside.
  • Add onion to drippings in skillet; cook and stir until crisp-tender. Add water and salt; bring to boil. Stir in rice; cover. Remove from heat; let stand 5 min. Fluff with fork. Cool to room temperature.
  • Add lettuce, tomato, mayo and reserved bacon; mix lightly.


Enjoy this serving of salad at a summer get-together with a serving of your favorite grilled meat.

Prepare as directed; cover. Refrigerate until ready to serve.


To Double: Prepare as directed, doubling all ingredients. To Halve: Prepare as directed, cutting all ingredients in half.

    The idea of it is good since it's really simple to make, however, I used miracle whip instead of Mayo (Nasty stuff) and it didn't taste great, just alright. Will try something else next time.

    I made this and it was very good. It's a nice change for a side dish. I like it's virsatility for adding just about anything to it. Next time I may try adding shrimp and sliced black olives.
