The rice mixture can be prepared ahead of time. Refrigerate up to 8 hours. Add lettuce, tomatoes, mayo and cooked bacon just before serving; mix lightly.
To Double: Prepare recipe as directed, doubling all ingredients. To Halve: Prepare recipe as directed, cutting all ingredients in half.

The idea of it is good since it's really simple to make, however, I used miracle whip instead of Mayo (Nasty stuff) and it didn't taste great, just alright. Will try something else next time.
I made this and it was very good. It's a nice change for a side dish. I like it's virsatility for adding just about anything to it. Next time I may try adding shrimp and sliced black olives.
